Nick O’Leary wines are produced from some of the best cool climate vineyards across the Canberra region. Consisting of 9 different vineyard parcels. Grapes were hand-harvested, then whole bunch pressed. The juice was cool fermented in stainless steel tanks and the wine held on light lees until bottling.

WINEMAKING
Grown from the Alsatian GM-198 clone, this cool climate wine comes from the high altitude region of Orange. Which enjoys an extended growing season and plentiful sunlight hours. Grown at 800 metres above sea level, this Riesling is bursting with energy. The grapes are destemmed and macerated prior to a light crush. Fermentation occurs in temperature controlled stainless steel tanks to retain flavour and freshness. It is ready to drink now but will develop with mid term cellaring.

WINEMAKING
Aromatico is a blend of Adelaide Hills Gewürztraminer, Riesling and Sauvignon Blanc. The three varieties of grape are hand-harvested and then blended. The wine is co-fermented to enhance the marriage of the three varieties. Protero focuses on Northern Italian styles in the cool climate of Adelaide Hills with little cellar intervention.
